Hey... It's Spoon. I'm a big guy. Always have been and always will be. Nothing I can change about that, but I can change how healthy I am. Back in 2008, I was over 300lbs and kept hearing the same thing from people... "you're not that fat, you're just a big guy. You wear it so well." That's BS to hear because, I was still fat. One day I said no more. I went to my doctor and asked, "Is it a medical condition, or am I just fat?" My doc ran tests and told me bad news... I was just fat. FML. I had never had to worry about losing weight, but that all had changed.

That day, I quit drinking soda, alcohol, sweet tea, and drank MORE water. Ice water became my "addiction". I also stopped eating food that I got from a window, aka Fast Food. It's so bad for you, yet so convenient. I did a lot of research on what foods to eat (Internet is research, right?) as everyone was saying completely different things. Eat breads before 6, DON'T EAT BREAD, Eat red meat, DON'T eat red meat. It's too damn much. I decided to take my own approach. I wrote down EVERYTHING I ate in a journal, and I would look what I ate at night. It really hits you what you ate when you see it on paper. I started to cut down on the amount I would eat at a sitting. Instead of a foot long Subway sandwich on Jalapeño Cheddar bread with a bunch of mayo, I would eat a six inch on wheat with more veggies. I would order a burger and fries at a restaurant and only eat half the fries. After a week of those changes, I dropped 10 lbs without any working out. 10 lbs is a BIG motivator for me. So then I went hardcore, which I do not suggest to do if you have not spoken to your Doctor to see if your body can handle it. I went to a strict Chicken breast and rice diet. I went to 30+ min of cardio every morning before I ate anything and weights at night. I was playing soccer every week. That 10 lbs in one week motivated me and showed me that I could lose weight.

That first month... I lost a total of 31 lbs. I felt like a Million bucks. clothes were lose and people were mentioning about the weight loss. That makes you feel so damn good. In a year, I lost a total of 45 lbs, but put on a little bit of muscle at the same time. I was the healthiest I had ever been in my LIFE.

Fast forward to May 2011. Playing softball out in BA and an took a throw to first in the face. At that time, I thought I rolled my ankle. Turns out I did more than that. I re-aggravated a past injury that possibly was a break in my ankle. I couldn't work out, play sports, NOTHING. So to fill up the time, I ate some Goooood food. Became a huge fan of taco places again, sandwich shops, pasta again. I have been eating like I was a KING. Now I'm as big as a castle. Weighed in at 294 the other day. I do not want to hit that 3 Bill mark. Also, I'm now bigger than a guy named Biggie. FML.

So I'm going to fix that. On my FB, I posted this:

I thought it was kinda cool that I inspired someone else to lose weight. That why I decided to make a blog to share some of the things I know, that I learn, and that I find. It could be a picture of me with my shirt off, to a recipe that I found that looks good and is kind healthy. Maybe your New Years Eve resolution was to lose weight and be healthier, but you feel you don't know here to start, maybe this will help.

When you start to lose weight, people start asking you advice. The one thing I always said was to Do Something. No matter what your skill level is in exercise is, or if you can't just cut cold turkey off eating. Do Something. Cut down on soda each week. Walk around your block with your dog. I love what the Professional Wrestler Legend, Ultimate Warrior said to someone who was looking to lose weight. You don't have to do what everyone else is doing at a gym. You don't even need a gym. Just move some sh$t around your house. Pick some sh#t up and move it as far as you can. Then do it again. Here is one of his videos.

Healthier Chicken Enchiladas


Ingredients:

4 oz. boneless skinless chicken breast, cubed
1 14 oz. can fired roasted tomatoes, organic
1 14 oz. can enchilada sauce, mild
½ bag Doritios, baked
2 cups cheddar cheese, fat free, shredded
1 cup Monterey Jack cheese, low fat, shredded
1 2.8 oz. can black olives, sliced, organic
1 large onion, diced
1 large bell pepper, diced
1 clove garlic, minced
½ cup cilantro
1 jalapeno pepper, minced
½ cup sour cream, non fat

Directions

Preheat oven to 375 degrees.  Sauté chicken cubes with garlic, salt, pepper, onions, bell pepper and jalapeno pepper for 5 minutes on medium heat add fire roasted tomatoes and simmer for another 2-3 minutes.  When done remove from heat and pour into a large mixing bowl.  Add fat free cheese, olives and tortilla chips, mix well.  In a 9x13 inch baking dish coated with cooking spray.  Pour half of the enchilada sauce into the bottom of the baking dish, tilt dish to evenly spread sauce across the bottom.  Next, pour meat, cheese and tortilla chip mixture into the baking dish.  Pour remaining enchilada sauce over the top.  Sprinkle remaining low fat cheese evenly over the top and bake for 20-25 minutes or until cheese is completely melted.   Garnish with non fat sour cream and fresh cilantro.

Nutrition Facts per serving: 377 cals., 27 gm protein, 43 gm carbohydrates, 12 gm fat.
